Bioconservation or biopreservation is an alternative method to the use of chemical preservatives. It consists in using microorganisms, called protective cultures, or their natural metabolites. Like any other method of preservation, it allows the control of the growth of pathogenic or spoilage flora, while preserving the organoleptic and nutritional qualities of the product. Fermentation is one of the oldest applications of bioconservation. Today the potential of protective cultures is also promising for various fresh or processed foods. Development of a qPCR Method for the Identification and Quantification of Two Closely Related Tuna Species, Bigeye Tuna ( Thunnus obesus ) and Yellowfin Tuna ( Thunnus albacares ), in Canned Tuna ArchiMer

Bigeye tuna (Thunnus obesus) and yellowfin tuna (Thunnus albacares) are among the most widely used tuna species for canning purposes. Not only substitution but also mixing of tuna species is prohibited by the European regulation for canned tuna products. However, as juveniles of bigeye and yellowfin tunas are very difficult to distinguish, unintentional substitutions may occur during the canning process. In this study, two mitochondrial markers from NADH dehydrogenase subunit 2 and cytochrome c oxidase subunit II genes were used to identify bigeye tuna and yellowfin tuna, respectively, utilizing TaqMan qPCR methodology. Mission d'expertise sur la restructuration de la filière pêche à Saint Pierre et Miquelon ArchiMer

L’objet de la mission consiste à proposer un projet technique de restructuration de la filière pêche à Saint Pierre et Miquelon. A cette fin, à la demande du Ministère de l’Outre-Mer, une mission d’expertise composée de trois experts (Camille KNOCKAERT / IFREMER Nantes ; Bruno LE FUR / Plate-Forme d’Innovation NOUVELLES VAGUES ; Yvon BONNIOU / ODYSSEE DEVELOPPEMENT) s’est déplacée sur Saint Pierre et Miquelon du 11 au 18 Février 2012 pour réaliser une évaluation du volume disponible de produits de la mer sur les deux îles, et proposer une activité de transformation, se positionnant dans le cadre d’un projet de pôle unique de transformation « bi localisé ».
